Linguine with Ricotta, Lemon and Mint⁣

I’m just gonna leave this here petitioning for carbs and being a passionate bloody ambassador for a good ol’ bowl of pasta 🙌🏼⁣

This is a glorious summer dinner. Not too heavy, and great for a hot evening in the garden ☀️⁣

Linguine with ricotta, lemon and mint⁣

Serves 2⁣
🍋 125g ricotta⁣
🍋 1 tbsp extra virgin olive oil⁣
🍋 35g Parmesan⁣
🍋 zest and juice of 1 lemon⁣
🍋 1/2 tsp chilli flakes⁣
🍋 1 clove of garlic, finely chopped⁣
🍋 1 courgette⁣
🍋 half a cup of frozen peas⁣
🍋 180g linguine⁣
1️⃣ in a little olive oil fry off the garlic and courgette until the courgette in soft⁣
2️⃣ meanwhile in a bowl mix the ricotta, olive oil, Parmesan, lemon zest and juice, and chilli flakes⁣
3️⃣ cook the linguine according the packet (keep it al dente) then drain reserving 1/3 cup of pasta water (this is important to so don’t forget!)⁣
4️⃣add the peas to the courgette and fry for a few mins⁣
5️⃣ then pour the ricotta mixture into the courgette, add approx 1/4 cup of pasta water and mix. Add the pasta and toss to coat. Sprinkle in the fresh mint⁣
6️⃣ serve into bowls with an extra sprinkle of chilli flakes⁣
