Breakfast plus the ‘demon’ carbs

When you find a brunch your husband can make you know it’s a winner! I love an eccentric brunch as much as the next halloumi or scrambled tofu eating legend but when you accidentally wake up at 11am on a Saturday totally ravenous and ready to shovel all the peanut butter into your mouth it’s time for an easy ‘shove it all on toast’ breakfast.

  • Gail’s Bakery wholemeal seeded sourdough
  • 1 large avocado, mashed
  • handful of cherry tomatoes, chopped
  • half a red chilli, chopped
  • 50g feta, chopped
  • 1 tbsp pesto, buttered on toast

I know carbs are pretty much top of the nutrients that everyone loves to hate and boycotting them is essentially hailed as the one stop shop to weightloss. I feel this is wild misconception; carbs are the body’s main energy source, the fibre in carbs contributes to good bowel health (among other things) and carbs actually help a person maintain a healthy weight… and let’s face it a life without carbs must be pretty miserable.

Instead of cutting out carbs, include complex, wholegrain carbs in your meal such as wholegrains (pasta, bread), quinoa, oats, sweet potatoes, brown rice etc. They’ll keep your energy up, help you feel full, contain vitamins and minerals such as B vits & vit E, aid concentration and brain power… the list goes on.
