Mocha Tahini Granola

I am a big advocate of batch cooking things. Granola is one I ALWAYS have a huge batch of – so double the quantities here to make a large amount that’ll last you a good while.

Granola is one of those cereals that can often be doused in sugar and full of additives. There is loads of good brands on the market now though but they’re often a lil spenny too. Making your own is the best way to make your fave flavour without breaking the bank.⁣

☕️ 1 cup oats⁣
☕️ 1/2 cup peanuts, bashed⁣
☕️ 1 tbsp instant coffee⁣
☕️ 2 tbsp tahini (or pb)⁣
☕️ 2 heaped tsp cacao (or cocoa)⁣
☕️ 2 tbsp maple syrup⁣
☕️ 2 tbsp coconut oil, melted⁣
1️⃣ in a big bowl mix the coffee with 2 tbsp boiling water. Then add the tahini, cacao, maple syrup and coconut oil and mix thoroughly⁣
2️⃣ add the oats and peanuts and stir to coat⁣
3️⃣ tip onto a baking tray – spread it out well. Then pop into the oven on 170degrees for 25mins. Keep shaking the tin throughout the cooking⁣
4️⃣ remove from the oven and leave to cool⁣

This is literally heaven served with coconut yog, sliced banana and a drizzle of peanut butter (when I say drizzle I mean shovel)
