Dark Choc, Peanut Butter Blondies (Vegan!)

Lockdown has made me want sweet stuff far more than I used to and as I’m all about listening to and nourishing my body and giving it peanut butter WHENEVER IT BLOODY WANTS and I think I’m onto a winner with these blondies

They hit the pudding craving spot whilst not being overly heavy or indulgent

🥜1 cup of coconut sugar (Coconut sugar is still a sugar, it is not nutritionally superior to any other good quality sugar. I just like the taste in baking. Substitute for light brown sugar)
🥜1 cup peanut butter (@pipandnut)
🥜1/2 almond milk (I used @innocent) + 3 extra tbsp
🥜1 cup of oat flour (whiz oats in a food processor or use the milling blade on your nutribullet)
🥜1/2 cup ground almonds
🥜1 tsp baking powder
🥜1/2 cup dark choc, chopped. I used @greenandblacks
🥜Sea salt
1️⃣ mix the coconut sugar and peanut butter together in a bowl. Use a whisk it was hard with a spoon!
2️⃣stir in the plant milk until fully combined
3️⃣ Add the oat flour, ground almonds, baking powder and a big pinch of sea salt. Stir
4️⃣ stir in the dark choc. I also added in a couple of extra tbsp of milk to get a wetter texture
5️⃣Pour into a lined brownie tin then sprinkle some more sea salt on top
6️⃣ Pop in the oven on 180 for 20-25mins. Keep an eye on it, you don’t want to overdo them as you want them goey
7️⃣Take them out of the oven and leave to cool on cooling tray. Then cut into rectangles and drizzle with melted dark choc .

Ps. I’m pretty sure every nutri bullet comes with a milling blade. It’s great for making your own nut flours, oat flours, milled chia seeds etc. So, dig it out from the back of your cupboard!
