Fig & Goats Cheese Tart

If you want something that feels special but is super easy and takes very little time to prepare then look no further my huns šŸ¤© this would also be a perfect dinner party starter šŸ„³ā£

šŸ 1 red onion, finely slicedā£
šŸ drizzle of honeyā£
šŸ 1/2 tbsp red wine vinegarā£
šŸ 125g goats cheeseā£
šŸ 2-3 figs, slicedā£
šŸ 1 tsp thymeā£
šŸ 1 roll ready rolled puff pastryā£
šŸ salt and black pepperā£
1ļøāƒ£ fry the onion in 1 tbsp oil until soft. Then add a good drizzle of honey and red wine vinegar and keep on a medium-heat heat for 5-10mins until soft and starting to caramelise. Donā€™t let them go crispy tho, add a little extra oil if theyā€™re going crispy. ā£
2ļøāƒ£ place the puff pastry onto a lined baking tray then, leaving a centimetre edge on the long lengths and an inch or 2 edge on the short lengths, we will start to fill the tart!ā£
3ļøāƒ£ first fill the tart with the caremlize onions, then some of figs, then the goats cheese, then finish with a couple of nice slices of figs. Sprinkle with the thyme, salt and black pepperā£
4ļøāƒ£ roll up the sides of the pastry, doesnā€™t matter if it looks scruffy itā€™s all part of the charm! Brush the pastry with a little beaten egg or milk then put in the oven for 25mins until they pastry is goldenā£

I served with a rocket & roasted pepper salad with a pesto dressing (2 tbsp pesto with some extra virgin olive oil) and a couple of new potatoes!ā£

We demolished it. It should probably serve 3-4 but we were 2 hungry humans last night šŸ¤Ŗā£
