Peanut Butter Overnight Oats

Monday morning breakfast and chill 😏⁣

I know not everyone has time in the morning before work but I absolutely love taking 15-20mins to just sit and enjoy a coffee and breakfast. Instead of chowing it down in front of your laptop screen. I always feel so much better for this, especially on a Monday. Gives me time to breathe and not immediately mourn the loss of the weekend. I also use it as a time to set my goals from the day, doesn’t matter how small. And now we’ve basically transitioned immediately from summer to winter it means it’s porridge season 🧣⁣

Peanut Butter & Banana Porridge ⁣
🍌35g oats⁣
🍌1 tbsp chia seeds⁣
🍌1 tbsp flaxseeds⁣
🍌 approx 200ml almond milk⁣
🍌1 tbsp peanut butter plus extra to drizzle⁣
🍌1 banana, sliced⁣
🍌1 medjool date⁣
🍌 honey⁣
1️⃣ add the oats and 3/4 of the milk to a pan and heat on a high heat constantly stirring for approx 5mins until the mixture thickens⁣
2️⃣ add the flaxseeds, chia seeds and peanut butter and stir. Assess if you need to add the rest of the milk to get your desired texture. Keep stirring for another 3-5mins then serve into a bowl⁣
3️⃣top with sliced banana, a drizzle of honey and peanut butter⁣
