Peanut Butter Overnight Oats

I know not everyone has time in the morning before work but I absolutely love taking 15-20mins to just sit and enjoy a coffee and breakfast. Instead of chowing it down in front of your laptop screen. I always feel so much better for this, especially on a Monday. Gives me time to breathe and not immediately mourn the loss of the weekend. I also use it as a time to set my goals from the day, doesn’t matter how small. And now weā€™ve basically transitioned immediately from summer to winter it means itā€™s porridge season šŸ§£ā£

Peanut Butter & Banana Porridge ā£
šŸŒ35g oatsā£
šŸŒ1 tbsp chia seedsā£
šŸŒ1 tbsp flaxseedsā£
šŸŒ approx 200ml almond milkā£
šŸŒ1 tbsp peanut butter plus extra to drizzleā£
šŸŒ1 banana, slicedā£
šŸŒ1 medjool dateā£
šŸŒ honeyā£
1ļøāƒ£ add the oats and 3/4 of the milk to a pan and heat on a high heat constantly stirring for approx 5mins until the mixture thickensā£
2ļøāƒ£ add the flaxseeds, chia seeds and peanut butter and stir. Assess if you need to add the rest of the milk to get your desired texture. Keep stirring for another 3-5mins then serve into a bowlā£
3ļøāƒ£top with sliced banana, a drizzle of honey and peanut butterā£
